Aloo/Potato Egg Curry: Hi Foodies,here we come back with new recipe in our Kitchen Recipes Book i.e,Aloo/Potato Egg Curry Recipe. This recipe is a simple and easy recipe for beginners, The combination of rice, aloo egg recipe and along with roti/chapthi is awesome. To get this recipe best taste, you prefer low flame cooking and also you make this curry fry or with more gravy as per your taste and preference. 

This is a mildly spiced curry which is made with a few amounts of ingredients. If the eggs are refrigerated, then always bring to room temperature before boiling to prevent breakage. Wash the eggs and begin to boil them in a medium flame when it turns hot flame set to medium-high(not very high). Boil the eggs until cracks are visible on the shells. Cover with a lid and keep aside for 5-7 minutes.

Ingredients (240 ml of cup used):

  • 4 Eggs.
  • 1-1/2 tsp of oil.
  • 1/2 tsp of cumin.
  • 2-3 green elachi(optional).
  • 3-4 potatoes(medium sized).
  • 1/2 tsp of cumin.
  • 1/2-3/4 tsp of red chili powder.
  • 1 tsp of garam masala.
  • salt as needed.
  • 1/8 tsp of turmeric.
  • 2 tsp of coriander leaves.
  • 1-1/2 tsp of ginger garlic paste.
  • 3/4 cup of tomatoes.
  • 1-1/2 cup of medium sized onions.
How To Make The Recipe:
  • First, ON the stove and boil the eggs.
  • After some time remove the shells and pierce them with a fork/knife randomly and keep aside.
  • Heat a pan and pour oil, add cardamoms and cumin allow to sizzle.
  • Add onions and fry until it turns to golden color and also fry ginger garlic until the raw smell will go.
  • Add tomatoes, salt, and turmeric. Fry until they turn soft.
  • And also add chili powder and masala powder, stir for 1-2 minutes.
  • Add potatoes and fry for 3 minutes.
  • Add water and enough cook the potatoes, cover it with a lid and flame set to sim.
  • Then add eggs and cook covered until the gravy thickens, add more water to make more gravy.
  • Add chopped coriander leaves and coriander powder.
  • Cover it and switch off the stove.
  • Finally, hot Aloo/Potato Egg curry is ready to serve.
