Kaju Mushroom masala curry is very tasty homemade style recipe in which soaked cashew nuts are cooked with mushrooms in a thick masala gravy. kaju mushroom masala recipe I took 1/4 cup of split cashew nuts and soaked in water for 30 minutes. Also, add fresh cream and dried basil leaves for taste. It tastes good when served hot rice and chapatis.

In this recipe, for foodies, they may add ghee instead of oil for good taste.

INGREDIENTS for CASHEW MUSHROOM MASALA:

  • Button mushrooms-200 grams
  • cashew nuts-125 grams
  • onion paste - 2 medium sized onions
  • tomato paste - made of 2 tomatoes
  • ginger garlic paste-1tbsp
  • fresh cream-1/8 cup
  • green chilis -2
  • red chili powder-1/2 tbsp
  • turmeric powder-1/4 tbsp
  • salt-1/2 tbsp (as needed)
  • coriander powder-1/2 tbsp
  • cardamoms-3
  • cloves-4
  • bay leaf-1
  • dried basil leaf-1/2 tbsp
  • cinnamon stick-1 inch piece
  • oil-4tbsp
  • coriander leaves-as needed.

INSTRUCTIONS for CASHEW MUSHROOM MASALA RECIPE :

  • soak cashew nuts in water for 30 minutes.
  • rinse mushrooms cut them into decently and keep aside.
  • heat a pan,add cinnamon stick,cloves,bay leaf,cardamoms,shahi jeera.
  • add grinded onion paste and saute for 2 minutes.
  • add ginger garlic paste, saute till the raw flavor is gone.
  • add little bit pinches of salt (as needed), coriander powder, red chili powder, and stir well.
  • add mushrooms and lightly stir for once.
  • later, add soaked cashew nuts and mix again.
  • cover it with a lid and cook for 5 minutes on a low flame.
  • add tomato paste and cook for 5 minutes.
  • add fresh cream and mix well.
  • add dried basil leaves, cook for 1 minute and switch off the heat.
  • finally, garnish with coriander leaves.
