HOMEMADE EGG BIRYANI | ANDA DUM BIRYANI RECIPE


Egg biryani recipe was really amazing and very good taste. For this egg biryani recipe, I used the clay pot. It's not a matter about pot, you can choose your priority.you can use normal cooking pot. Any heavy pot with bottom thickness, non-stick pot is preferred. Cooking time may slightly vary for the normal pot. It can time a little more time than the clay pot. So please take care while cooking on Dum or it may get burnt. You need to cook the egg masala gravy, rice in different vessels Parallely. By the time the rice is partially completed, and the gravy will be ready and you can put the rice on the gravy.

If you really don't have time, then add ready to use biryani masala powder. Adjust as per your Preferences, according to your taste. I have used 1-1/2 tsp of homemade chilli powder for this egg biryani recipe.

INGREDIENTS:

For Masala:

  • Cloves -4
  • nutmeg-1/4 of a fruit
  • shahi jeera -1tsp
  • black pepper -1tsp
  • coriander seeds-1tsp
  • star anise-1
  • bay leaf-1
  • cardamom-5

For Fried onions:

  • thinly sliced onions-2
  • oil for deep frying

For the rice:

  • Basmati rice - 500 grams
  • water-2 litres to boil
  • oil-2tbsp
  • salt as needed
  • cinnamon-5
  • cardamom-5
  • cloves-4
  • bay leaf-1
  • shahi jeera -1tsp
  • mint leaves-2 springs

For Dum Biryani:

  • oil- 5 to 6 tbsp
  • sliced onion-1 medium sized
  • mint leaves-1/2 cup
  • coriander leaves-1/2 cup
  • ground masala powder-1tbsp(for gravy)+1tbsp(for rice)
  • yogurt-1 cup(250 ml)
  • turmeric powder-1/2 tbsp
  • red chilli powder-1-1/2
  • salt as needed
  • fried onions-2 medium sized
  • boiled eggs-6
  • ghee/butter-2tbsp
  • Non-stick heavy bottomed cooking pot
  • Aluminium foil

INSTRUCTIONS for EGG BIRYANI:


Soaking rice:

  • soak 500 grams of rice in water for 30 minutes.
  • rinse for 2-3 times before using.

Frying onions:
  • 2 medium-sized onions chopped into very thin slices.
  • deep fry them until they turn into lite golden colour and crispy.


Preparing Biryani Masala :

  • dry roast coriander seeds, star anise, nutmeg, bay leaf, cinnamon, cloves, cardamoms, shahi jeera, peppercorns for a minute and grind them into a fine powder.


 Rice boiling :

  • Pour 2 litres of water in a large bowl and boil.
  • when the water starts to boil add needed salt, whole garam masala spices,2tbsp of oil, mint leaves.
  • add the soaked basmati rice. water stops to boil so bring it to a boil again.
  • cook for 2-3 minutes, and turn off the flame and strain out the water immediately from the rice.


Cooking masala gravy for biryani:

  • heat 6tbsp of oil in a heavy non-stick cooking pot.
  • add green chillies, sliced onions, salt, and fry.
  • then add ginger garlic paste and saute for 1 minute.
  • add turmeric, red chilli powders,1tbsp of ground masala powder and mix well.
  • put coriander leaves, fresh mint, yoghurt and mix well.
  • add the boiled eggs, stir and cook on low flame for 3-5 minutes.

Assembling and cooking Dum biryani:

  • lightly pour 2 pinches of masala powder on the gravy.
  • add deep fried onions, coriander leaves, and mint.
  • spread half of the partially cooked rice as a layer.
  • sprinkle a pinch of masala, add fried onions, coriander leaves and mint,1 tbsp of ghee.
  • spread the remaining rice as a layer and repeat the same process.
  • cover the pot with an aluminium foil, and close with a lid and cook for 10 minutes with low flame.
  • Switch off the heat and leave for 15 minutes.
