BUTTER CHICKEN RECIPE | MAKING HOMEMADE BUTTER CHICKEN

Butter chicken at home tastes absolutely delicious, rich and creamy. Butter chicken is one of the most popular recipes. The combination of naan or kulcha with butter chicken is the most Indians love during their restaurant visits.

Chunks of grilled chicken cooked in a smooth creamy tomato based gravy are called as butter chicken. To make an authentic butter chicken recipe, First, we need to grill the chicken. This can be done in a pan or in the microwave oven also. Next, cook it up in the rich gravy. I prefer pan for this recipe. If possible you may follow the smoke the chicken once it is roasted on a pan.

INGREDIENTS (240 ml cup used)

First marination:
  • 1/2 kg chicken (bore or boneless)
  • 3/4 tbsp lemon juice
  • 1/4 tsp salt
  • 1/2 tsp red chili powder
Second marination:
  • 3/4 tsp kasuri methi crushed or powdered dried fenugreek leaves
  • 1/2-3/4 tsp garam masala powder
  • 1/8 turmeric powder
  • 3/4 tbsp oil
  • 1 tbsp ginger garlic paste
  • 1/2 cup thick curd
For the butter chicken gravy:
  • 2tbsp butter
  • 1 tsp ginger garlic paste
  • 1 cinnamon
  • 2 green cardamoms
  • 2 cloves
  • pinch of methi powder(optional)
  • 1 to 2 green chilies slit
  • 4 large tomatoes (remove skin and seeds)
  • 1 tsp red chili powder 
  • 10 cashew nuts 
  • 1/2 tsp methi powder(dried fenugreek leaves)
  • 1/2-3/4 tsp garam masala powder
  • 1/4 tbsp sugar
  • salt as needed
  • 80 to 100 ml of chilled cream
  • coriander leaves (for garnishing).

How to make the recipe:

Preparation for butter chicken recipe:
  • Wash chicken with fresh water.
  • First marinate with lemon juice, salt and chili powder for 20 minutes.
  • Next marinate again with yogurt,garam masala powder, ginger garlic paste, turmeric powder, oil, and methi powder.
  • Refrigerate for at least 3 -4 hours. Overnight works best.
  • Soak cashews or almonds for 1 hour. Remove the skin and make the smooth paste.
  • Make ginger garlic paste and puree the tomatoes.
How to make butter chicken:
  • Grill the chicken in a microwave oven. For the stovetop method, add 1 tbsp butter and add the marinade.
  • Fry on high flame till the moisture gone. Keep stirring to prevent burning. Cook till it is cooked.
  • To grill it in the microwave oven, Pre-heat to 240 C for at least 15-20 minutes. Grill until the meat is cooked well. It may take about 30 minutes depending on the size of your chicken chunks.
  • Heat a pan with butter. Add cinnamon, cardamoms, and cloves. Fry for 1 minute.
  • Add green chilies, ginger garlic paste and fry till it turns fragrant.
  • Next, pour the pureed tomato. add red chili powder, salt, and sugar.
  • Mix and cook until the tomato puree becomes thick.
  • Pour 1 cup of water. Add cashew or almond paste, methi powder. Add as needed water to suit your desired consistency.
  • Bring the mix to a boil and with a low flame for 3-5 minutes.
  • Add methi and garam masala powder.
  • Add chicken. Mix and low flame about 7 minutes. The chicken should become tender and soft.
  • Stir and low flame for about 3 minutes. Pour chilled cream and terminate the stove.
  • Finally, garnish with coriander leaves and extra cream if desired. Serve with long grain rice or naan.

Recipe Notes:
  • Curd/ yogurt: If you don't have curd or yogurt, you may use thick yogurt too. But the cooking time takes longer.
  • Cream: Chill the cream and add it to the gravy. Switch off the stove otherwise, the gravy could look curdled.
